Super Delicious Pavlova

Warm weather entertaining means light and easy meals including this Super Delicious Pavlova. So sorry for the delay!  Here it is, just in time for your warm weather entertaining. Enjoy with Champagne!

4 egg white

1 cup of super fine sugar (caster sugar)

1 teaspoon of cornstarch

1 teaspoon of white wine vinegar 

1 teaspoon of vanilla

pinch of salt (I love Maldon, I crush it in the palm of my hand just a bit to avoid the bigger pieces)

2-3 cups of your favorite fresh fruit.  I prefer blackberries, raspberries and strawberries. Clean your fruit combine in a bowl and leave out at room temperature for an hour or so before putting on top of meringue. 


Method; Preheat oven to 180F.

Place the egg whites and salt in a bowl of an electric mixer fitted with the whisk attachment. Beat the egg whites on high speed until firm stiff peaks form (about 1 minute) wth the mixer still on high slowly add the sugar and beat until it makes shiny/glossy peaks (about 2 minutes) 

Remove the bowl from the mixer, sift the cornstarch onto the egg whites, add the vinegar and the vanilla  and fold in very gently and lightly with a rubber spatula. Next, pile the meringue onto the parchment paper either with a 9" predawn circle or go freehand making a disk that will hold your wonderfully tasty berries. Bake for 1.5 hours then turn off the oven, keep the door closed and allow the meringue to cool completely in the oven (about 1 hour) It will be crisp on the outside and soft on the inside. Transfer the meringue  to a plate and spread the top completely with fresh whipped cream. Spoon the berries into the middle of the meringue leaving the sides with the fresh whipped cream. Serve it and enjoy!  You can also make mini pavlovas for individual servings.
